Zucchini and Daikon Subji

Zucchini (Lauki or summer squash) & Daikon Delight Subji

Effect: Cooling for Liver

  • 2 cups peeled chopped lauki (indian grocery, or substitute with zucchini or summer squash)

  • 1 cup white Daikon radish peeled/chopped

  • 1 tsp ghee

  • 1 tsp Panch Phoran

  • 1 tsp of your spice mix or:

  • 1/4 tsp of turmeric

  • 1/4 tsp of cumin powder

  • 1 tsp of coriander powder

  • 4 curry leaves

  • soma salt to taste

Warm the ghee and add all the spices. Add the Daikon radish and stir fry for 3 minutes. Add the lauki. Add some warm water and salt to taste. Cover and cook for 10-12 minutes until zucchini is cooked but not mushy.
