Freedom Roll (Berry Dessert Roll)

This delicious red, white and blueberry dessert roll is perfect anytime you want a light, delicious berry dessert with a beautiful and showy presentation perfect for parties and celebrations. It's perfect for the 4th of July because of it's red and blue berries on top of fresh white whipped cream! In fact, it mimics the light style of birthdayman/woman cakes they serve in Denmark which combine a white cake, berries and fresh whipped cream. The difference is this recipe is made with angel food cake. So it's pretty much berry shortcake but with more "bling!" The light fluffy base of angel food cake makes it perfect for summer where a chocolate or heavy nutty dessert would be too heavy. Topped with fresh whipped cream and berries  makes the Freedom Roll perfect for special summertime celebrations!

 

 

4 Ingredients:

  • Angel Food Cake (you can buy a store bought package or make your own, your call - sorry nothing fancy here today =)

  • Fresh Whipping Cream (1-2 pints)

  • 1/2-3/4 cup powdered sugar enough to sweeten cream to your liking (organic is good or you can make your own by grinding organic sucanat or sugar in your Ninja or other small blender, or you can just use brown sugar)

  • Berries of Choice (I prefer 1 few cups sliced strawberries, 1-2 cups blueberries, 1-2 cups other berries such as blackberries, raspberries or whatever is in season for you where you live)

  • 2 pinch cardamom powder (optional)

 

Directions:

  • blend angel food cake as directed on box

  • pour batter into metal baking sheet lined with parchment paper and spread out to cover entire backing sheet (approx 12"x14" sheet with a 1" deep edge is best, but something close is fine) It'll puff when you cook it, but don't worry, it won't spill over. 

  • Bake at 350 degree Fahrenheit approx 20-25 minutes until golden brown (edges may crack slightly)

  • while cake bakes, blend your fresh whipping cream, cardamom (optional) and powdered sugar/brown sugar in a Ninja or with hand immersion blender or blender of choice until its thick and solid but has not turned to butter, then cover and set into fridge until cake it done baking and cooling

  • Prep berries by slicing strawberries and set in fridge

  • When cake it done, remove it from pan and parchment paper and lay flat onto a large kitchen towel and roll into a log, Set it aside to until cool

  • Once cake cools, place it into tray of choice, then lay it flat and coat with layer of whipped cream, then top with 1/2 of berries and roll into a roll/log

  • Top log with the remaining whipped cream and then the berries

  • Enjoy!
